Should I use ID 7068 or the full category path?

Both are acceptable to Google. Using the numeric ID 7068 is often preferred as it is language-independent and less prone to errors during feed updates.

Does this category require specific product attributes like size or color?

No. Unlike the Apparel & Accessories category, this furniture accessory category does not have mandatory requirements for attributes like size, color, or age group.

Can I use product_type to categorize these items instead?

You can use product_type for your internal organization, but it does not replace the required google_product_category, which is necessary for proper taxonomy mapping.
